2 Tbsp olive oil
2 medium onions
2 cloves garlic, crushed
2 green chillis, chopped
1 Tbsp grated fresh ginger
1 1/2 tsp ground turmeric
1 tsp ground cumin
1 Tbsp ground coriander
1/2 - tsp chilli powder
420g pumpkin, cubed
210g potatoes, cubed
440g sweet potatoes, cubed
400g zucchini, cubed
1 kg beef or lamb, bite sized
1 tsp salt
410g can crushed tomatoes
1 cup coconut milk

- Heat oil in a large pan. Add onion, garlic, ginger, and chillis and cook over medium heat, stirring until just soft. Then add turmeric, cumin, coriander, and chilli powder. Stir until just heated through.
- Add meat and cook, stirring, over high heat until meat is well coated with the spice mixture and browned all over. Stir in salt and un-drained tomatoes and simmer, covered for 1 1/2 hours or until meat is tender. When meat has been cooking for 45 minutes, add pumpkin, potatoes, and sweet potatoes.
- Add zucchini and cook until soft. Then add coconut milk and stir. Simmer, uncovered, for another 5 minutes until sauce has thickened slightly.
