1 1/2 cup sugar
3 cups rice flour
3/4 tsp bicarb soda
1 1/2 tsp cream of tartar
1/2 cup cocoa powder
1 cup currants
- Cream butter until nearly white. then gradually beat in sugar. When sugar is beaten in, add eggs on by one, beating well after each addition.
- Mix in sifted flour, bicarb, cream of tartar, and cocoa powder. Then add currants and stir thoroughly.
- Place teaspoonfuls onto baking paper. Bake in preheated oven at 180 C.
