1 cup sugar
2 tbs golden syrup
4-5 cups water
1 tsp vanilla
Juice of 2-3 lemons
- In a large saucepan, combine all ingredients and bring to boil over medium heat, stirring regularly. Simmer for 5 minutes, ensuring sago does not stick to the saucepan. Tun off heat. Cover saucepan with lid.
- As sago cools, stir regularly. Check for sweetness and consistency, both of which will vary depending on the freshness of the lemons. It should be quite sweet and like thick custard, only transparent. If necessary, make adjustments accordingly.
- When cool, pour into a covered serving bowl and set in refrigerator.
- Serve chilled with boiled custard, cream or ice-cream.
