2 kg raw chicken pieces, or large chicken broken into pieces
1 large tin apricot nectar
1 pkt French onion soup mix
3 tbs seasoned plain flour

- Skin chicken and dip in flour.
- Place chicken pieces in an oven-proof dish.
- In microwave-safe jug, combine nectar with soup and microwave on HIGH for 4 minutes. Stir until well blended and pour over chicken. Cover casserole dish with lid and bake in oven for about 1 ½ hours. Baste chicken with juices as desired.
- Before serving, carefully spoon off excess fat. (Meal may be cooked the day before and placed in the refrigerator. When the fat sets, remove before reheating). Serve with vegetables, and with or without rice.
- Will freeze well for future use.
