- Preheat oven to 180 C. Grease 2 baking trays with rice bran oil (or any other oil of your choosing).
- In a mixing bowl, using an electric mixer set on medium speed, beat butter, sugar, and vanilla extract until fluffy. Beat in egg white.
- Sift flour and baking powder into a small bowl. Gently stir flour mixture and water alternately into butter mixture, beginning and ending with flour. Stir in chocolate bits.
- Place metal teaspoonfuls of mixture, 2.5 cm apart, on prepared baking trays, then press lightly with back of spoon. Bake until lightly golden, about 10 to 12 minutes. Place baking trays on wire cooling trays and cool for 2 minutes. Transfer cookies to cooling tray and cool complete.
