- Preheat oven to 200 C. Grease a 12 cup muffin pan tray with butter or line with paper patty cases.
- In a mixing bowl, sift the flour and baking powder. Add sugars; mix well.
- In a second mixing bowl, whisk together egg whites, egg, milk, apple sauce, and vanilla. Add milk mixture to dry ingredients; stir just until combined. (Do not over mix.) Fold in 1/3 cup chocolate chips.
- Divide mixture among prepared muffin cups, filling each about two thirds full. Sprinkle remaining chocolate chips on top. Bake muffins until tops are firm and golden, about 20 minute. Place pan on a wire cooling rack and cool slightly. Turn muffins out onto rack and cool. Sift with icing sugar.
