6 cups thinly shredded red cabbage (750g) For Dressing
1/2 tsp salt 1/4 cup natural yoghurt
1/2 tsp black pepper 6 tsp mayonnaise
1/4 tsp ground ginger 1/4 cup fresh orange juice
Orange rind julienne strips for garnish 3 tsp fresh lemon juice
Fresh parsley sprigs for garnish Grated rind of 1 orange
1/2 tsp salt 1/4 cup natural yoghurt

- To prepare dressing, combine yoghurt mayonnaise, orange juice, lemon juice, and orange rind in a large bowl. Mix until evenly combined.
- Add red cabbage to dressing and, using a spoon and fork, toss until well coated. Add salt, pepper, and ginger. Mix well.
- Spoon coleslaw into a serving bowl or onto a serving platter. Garnish with juilenne strips of orange rind and parsley sprigs. Serve immediately.
