- Preheat oven to 200 C and lightly grease 2 (9x19cm) loaf tins. Line the base and long sides with baking paper.
- Combine all ingredients, except tomato in a bowl and seas to taste. Divide mixture between tins and top each with sliced tomato. Place tins on a baking tray and cook for 1 hour or until a skewer inserted in the centre comes out clean.
- Leave in tens to cool slightly, then turn out and cut into thick slices. Serve warm.
