250g cooked chicken, chopped
125g cooked ham, finely chopped
1 tbsp fresh mixed herbs
2 eggs, lightly beaten
1 tbsp milk
125g whizzed arlmonds
Oil for frying
Salt and pepper
Mixed salad leaves, to serve
- Place the cauliflower, chicken, ham, herbs and one of the eggs in a large mixing bowl. Season to taste with salt and pepper, and mix together.
- Divide the mixture into small portions and shape each into a ball.
- Beat the remaining egg with the milk in a wide, shallow dish. Place the processed almonds in a separate wide, shallow dish.
- Coat the chicken balls in the egg mixture, allowing any excess to drip back into the dish, then coat in the processed almonds.
- Heat the oil in a large frying pan over a medium heat and cook the fritters until they are golden brown.
- Transfer to a warmed serving dish and serve immediately with mixed salad leaves.
