2 thick leekc cut into large chunks
1/2 head celery
2 large carrots, cut into chunks
2 bay leaves
- Place the all of the ingredients in a medium to large pot and cover with water.
- Bring the pot to the boil, then reduce to a simmer and leave it for about six hours.
- You may need to top it up once every hour or two.
- Strain the veggies and bones from the broth using a strainer and place.
