4 tomatoes, sliced
1/2 cucumber, peeled and sliced
1 small red onion, sliced thinly
115g feta cheese, cubed
8 black olives
3 tbsp extra virgin olive oil
1 tbsp lemon juice
1/2 tsp dried oregano
Salt and pepper
- To make the dressing, blend together all the ingredients in a small bowl, or put into a screw-top jar and shake until well blended.
- Arrange the vine leaves on a serving dish and then the tomatoes, cucumber and onion. Scatter the cheese and olives on top. Pour the dressing over the salad, season and serve immediately.
