4 eggs
175g broccoli, cut into small florets
300g smoked mackerel fillet
1 crisp eating apple

2 tbsp cream cheese

2 tbsp snipped fresh chives

- Place the eggs in a saucepan of cold water. Bring the pan to the boil over a high heat and boil for 10 minutes. Drain the eggs, crack the shells and rinse in cold water. Peel and cut into slices.
- Meanwhile, bring a saucepan of water to the boil over a high heat. Place the broccoli in the pan and boil for 3 - 4 minutes. Drain and rinse in cold water.
- Slice the mackerel diagonally into strips. Core and slice the apple, sprinkling with a little lemon juice.
- To make the dressing, place the lemon juice, cream cheese, mustard and chives in a jar and shake well to mix evenly. Season to taste with salt and pepper.
- Combine the eggs, broccoli, mackerel and apple in a salad bowl and pour in the dressing, tossing with two forks to mix thoroughly, then serve immediately with crusty bread.
