1 1/4 cups mozzarella cheese, shredded

3 tbsp coconut flour
1 large egg
1 tsp Italian seasoning, optional

4 oz cheddar cheese or tasty

4 tbsp almond flour

- Preheat oven to 400 F and in a microwave bowl melt the mozzarella cheese for about 1 min then 10 second intervals until done. Stir in between.
- Combine flours and seasoning in a bowl. When the cheese is melted let cool for a minute then add to flour mixture and work through. Add egg when cooled a bit more and combine everything. I use my hands at this point.
- When all combined add dough to baking paper and lay another sheet over the top. Roll with rolling pin to a flat surface.
- Cut diagonal lines beginning from the edges of the dough to the centre ,leave a row of dough untouched about 4 inches wide. Alternate laying ham and cheese on that uncut stretch of dough.
- Then lift one section of dough at a time and lay it over the top covering the filling.
- Bake for around 15 mins until has turned golden colour.
