- Preheat oven to 210 C (gas 190 C). Brush a 12 hole muffin tin with melted butter or oil. Sift the flour into a large bowl; add the oat bran and the sugar. Make a well in centre of the mixture.
- Add combined butter, milk, eggs and banana all at once. Using a wooden or metal spoon, tir until just mixed. (Do not over-beat; the batter should remain lumpy.)
- Spoon mixture into prepared tin. Bake 15 mintues or until puffed and brown. Transfer muffins to a wire rack to cool.
