- Place two layers of potatoes and onion into a shallow, microwave proof dish. Cover with lid or kitchen paper and cook for 5 minutes on HIGH. Move potato pieces around to ensue tenderness. Arrange capsicum, tomato and basil (or parsley) over potato.
- Combine eggs, sour cream, and salt and pepper in a bowl. Pour over vegetables. Cook on HIGH for 5 minutes. Sprinkle top with cheese
- Cook for 7 minutes or until firm. Allow to stand for 10 minutes before serving.
